At hornbill garagiste winery a limited volume of hand crafted wine
is made with passion by family and friends. The wine is produced in
true garagiste tradition, from selected grapes, sourced from
vineyards in the Hemel & Aarde Valley Limited interference,
makeshift tanks an equipment as well as the absence of modern
technology, helps to produce a unique artisan wine. |

At this stage only dry red wines are made, with merlot as the
flagship variatal. Wine is a work in progress.
Colour is inky dark, rich purple-red conveying class and quality.
Nose is full of classical, white pepper, cinnamon, menthol, with a
hint of chocolate and dark Amarillo cherry fruit core.
The palate has a full and assertive entry crushed red berries,
followed by a chewy texture and lasting finish achieved through
structured tannins and acid to match and balance the typically high
South African alcohol levels |

After an extended
period of cold maceration and controlled, whole berry alcoholic
fermentation, the wine is racked into old French Oak barrels with
staves and left for between 18-24 months. This whole process richly
adds to the complexity and fruity flavour of the wine.
Malolactic fermentation is usually allowed to complete in the year
fallowing harvesting and two or tree racking are used to clear the
wine.
Excessive filtration and fining is avoided when possible and
therefore a limited amount of sedimentation is found in the wine.
